A bit on the side…. Jacqui’s Waldorf Salad

waldorf-salad-2The choice of amazing salads and vegetable side dishes is almost endless, so many to choose from. For vegetarians, a salad or side dish (or both!) can be the main attraction. Who needs a lump of meat on their plate?

Under the banner of ‘A bit on the side…’ I’m going to share some side dishes that I love. Some are variations on classics, like this one, but most are new arrangements; courtesy of whatever is in the grocery store or fridge at the time.

 

Jacqui’s Waldorf Salad – serves 2 as a side dish, preparation time 10 minutes, cooking time ZERO minutes – now that has to be a bonus!

Ingredients:

  • 1/4 medium red cabbage, sliced thinly
  • 1 green apple, quartered and cored and sliced thinly (I prefer Granny Smith if available)
  • 170g can whole kernel sweetcorn, drained and rinsed
  • 1 tbsp greek yoghurt
  • 1 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 50g chopped walnuts
  • ground black pepper

 

Method:

Put the red cabbage, apple and sweetcorn in a bowl and mix together. Add the lemon juice and mix again. Add the yoghurt and mayonnaise and mix until all the fruit/vegetables are evenly coated. Add the walnuts and gently mix. Season with black pepper, et voila!
